Easy Greek Feta Cheese Pie - Tiropita (Vegetarian)

This is a version of the classic Greek feta cheese pie. The original version requires quite a bit of work, carefully placing layer upon layer of filo and feta together. Each filo sheet needs to placed perfectly to ensure the feta mixture doesn't ooze out when baked and looks perfect when out of the oven.

This version is exactly the opposite of that. It's quick and easy to assemble. All of the ingredients are readily available and you will have a delicious baked pie with minimal time commitment. It's assembly looks messy, almost haphazard, leaving you wondering if you are doing it correctly. But alas! at the end it all comes together, looks delicious, smells amazing and you will have your whole family asking for seconds!

 Easy Greek Feta Cheese Pie - Tiropita (Vegetarian)

Prep Time: 20 mins      Cook Time: 1 - 1.15 hrs      Serves 6-8

Ingredients:

  • 1 16 oz box of filo dough
  • 1/2 cup of olive oil or melted butter 
  • 1-1/5 lbs of feta cheese crumbled
  • 3 eggs
  • 1 can seltzer water
Preheat oven to 375 degrees

1. Brush the bottom of your 9x13 pan with oil/butter.

2. Open the filo packet and lay sheets flat. Lightly drizzle top filo sheet with oil/melted butter using a pastry brush. 

3. Sprinkle filo sheet with 1/4 cup feta cheese crumbles (it may not seem like much but it adds up once the pie has been assembled)

4. Place hands on opposite ends of filo sheet. Using your walking fingers, carefully scrunch the sheet together, like an accordion.

5. Carefully lift the scrunched up sheet and place in your baking sheet. (Don't worry if it tears up a bit or it it looks messy, it all comes together at the end) 

6. Continue this process for each filo until your pan is full or your filo package is done.

7. Drizzle any remaining oil/butter over the top of the assembled pie.

8. Whisk eggs in bowl and add seltzer water (pour seltzer water slowly to avoid spilling).

9. Pour egg/seltzer mixture over assembled pie and let pie rest for 15 minutes to give it a chance to absorb some of the liquid (optional: you can sprinkle sesame or poppy seeds over top of pie)  

10. Place pie in a 375 degree preheated oven and bake for about 1 hour or until it's golden brown (cooking time varies by oven. Ours needs about 15 minutes longer. No need to worry about over baking...it will only get crunchier)

Serve warm or at room temperature as is, or make it a full meal by adding a side salad. Kids love it and is perfect for school lunch the following day.

A few notes...Don’t squeeze the filo pieces too tightly together (they need some space). You can add oregano or thyme to the feta to up the flavor. Be Bold, experiment!
